Salmon and Walnut Ceviche

    1. Freeze the salmon in advance for at least 24 h for safety or buy it directly frozen. Thaw afterwards.
    2. Rub the half garlic clove into a bowl for flavoring, add the chili paste and chopped chili, lime juice, ½ teaspoon grated ginger, chopped coriander, sesame oil and the juice of half an orange.
    3. Add the chopped red onion and let it macerate in cold for 15-20 minutes.
    4. Toast the walnuts in a pan and chop.
    5. Cut the salmon into cubes without skin and bones.
    6. Add the chopped salmon to the previous bowl, mix well and serve in a bowl with orange segments, chopped walnuts and more chopped coriander. Optionally, add a few slices of chili for extra spice.
