    1. In a bowl, mix the whole wheat flour, rolled oats, baking powder, ground cinnamon, ground ginger, and salt.
    2. In a separate bowl, combine the wet ingredients: agave syrup, olive oil, applesauce, and the orange zest and juice.
    3. Add the dry ingredients to the wet mixture and mix well. Fold in the grated carrots and apple, chopped walnuts, chopped dried apricots and figs, and the eggs. Mix gently with a spatula.
    4. Fill muffin molds to the top with the batter and bake at 190°C for 20 minutes. Let cool before serving.
