    1. Soak the rice along with the almonds for at least 2 hours.
    2. For the date paste: Soak the dates in hot water for 10 minutes, then drain and blend them into a paste.
    3. In a blender, add the water, soaked rice and almonds, and one tablespoon of date paste. Blend and strain through a cheesecloth or a fine-mesh strainer covered with muslin to remove all the pulp.
    4. Refrigerate and serve cold, sprinkled with a bit of ground cinnamon.

Tips

You can add lemon zest to the rice before blending to give the horchata a fragrant aroma.
