This recipe uses leftover juicing pulp to make healthy energy balls. We’re using a mixture of carrots, apples and ginger combined with ground mixed spice and walnuts for a flavour similar to carrot cake.

1) Preheat oven to 180ºC.
2) Mash the bananas with the rolled oats in a medium bowl.
3) Add the raisins and ½ tsp. of cinnamon.
4) Line baking tray with baking paper and drop 1-2 tbsp. of cookie dough per cookie onto the tray.
5) Press down and shape into cookies.
6) Bake for 20 minutes then allow to cool.
