Prune and Avocado Brownie

Method

  1. For the peanut butter:

    1. Roast the peanuts at 180°C (350°F) for 15 minutes. Remove the skins and blend until smooth and creamy.

  1. For the brownie:

    1. Add the almonds to a pot of boiling water and blanch for a few minutes. Remove the skins and, once dry, grind them until you obtain a fine almond flour.
    2. In a bowl, mash the ripe bananas and avocado. Add the remaining ingredients except the prunes. Mix well, then fold in the prunes chopped into large pieces.
    3. Line a square baking tin with baking paper. Add the brownie batter and bake at 180°C (350°F) for 30 minutes.
    4. Dust with icing sugar once out of the oven.

Tips

Serve with a spoonful of Greek yogurt on top for an even more delicious touch.
