Method

    1. For the roasted feta cheese: prepare an herb oil by mixing it with the chopped thyme and coriander, dried oregano, salt and pepper.
    2. Place the feta cheese in a small ovenproof dish and pour the above oil on top. Bake at 190 ºC for 40 minutes or until the surface begins to melt a little.
    3. Meanwhile, prepare the caramelized nuts: heat them in a saucepan with the honey and water, stirring constantly until a caramel texture is obtained. Allow to reduce and remove to a tray with parchment paper to cool.
    4. When the feta cheese is roasted, sprinkle a few of the caramelized almonds on the serving dish. Place the baked cheese on top and serve with toast and grapes or whatever fruit is in season.
