  1. 1. Prepare a date caramel by pitting the dates and hydrating them for about 10 minutes in hot water. After this time, drain, reserving a little water, and mash until you have a homogeneous cream.
    2. Chop the walnuts finely in a mincer and the peanuts also, but in small touches, so that they are chopped a little coarser. Reserve the peanuts for the end.
    3. In a large bowl, beat the egg with the liquid ingredients. That is, the date paste and the oil. Then add the dry ingredients: the crushed walnuts, the oat flour, the cinnamon, and the yeast.
    4. Mix everything well and finally, incorporate the peanuts, integrate well with the help of a spatula and let the dough rest for 15 minutes.
    5. Preheat the oven to 180 °C.
    6. Form into small balls, flatten slightly and place on a baking tray with parchment paper. Put a walnut in the middle of each cookie, brush with maple syrup or honey and sprinkle with a little salt.
    7. Bake for 9 minutes and let cool.

Tips

The unbaked dough can be frozen, without decoration, in a zip bag. Add 3-5 minutes more to the baking time and they will be ready without having to thaw them.
