To decorate:

Method

    1. Hydrate the dates in hot water for 10 minutes. Then grind together with the macadamias until obtaining a paste.
    2. Mash the bananas in a bowl with a fork and mix with the crushed dates and macadamias together with the olive oil to obtain a paste. Add the vegetable drink, the eggs and beat everything.
    3. Then sift the wholemeal spelt flour, baking powder, baking soda and cocoa powder through a sieve or mesh strainer to avoid lumps.
    4. Add the chopped macadamias and mix again until all ingredients are well blended.
    5. Pour the mixture into the doughnut molds and bake for 25 minutes at 170ºC (prick one of the doughnuts with a toothpick, if it comes out clean, they are ready). Allow to cool.
    6. Melt the dark chocolate in the microwave or in a double boiler with a tablespoon of coconut oil. Coat the top of the donuts with the melted chocolate and decorate with chopped macadamias and pistachios. Cool slightly and serve.

Tips

You can easily fill the donut molds with a piping bag.
