  1. For the tart:

    1. Mix the eggs, cooking cream, salt, and pepper in a bowl. Beat well and set aside.
    2. Fold each sheet of phyllo pastry in an accordion shape and place them in a baking dish.
    3. Brush the phyllo pastry with melted butter. Tuck slices of Brie cheese and slices of dried figs between the folds of the phyllo pastry.
    4. Pour the egg and cream mixture over the pastry.
    5. Top with chopped pistachios and a handful of pine nuts, and sprinkle with dried thyme. Bake at 180°C for 25 minutes.

Tips

Brush each sheet of phyllo pastry with melted butter just before adding the next one to achieve an extra crispy, golden finish.
