  1. 1. Add oats and salt to a food processor and blend into rough flour.
    2. Add chopped dates and blend for 30-50 seconds until mixed with rough oat flour.
    3. Add in the peanut butter and coconut oil. Blend until a dough forms.
    4. Put the mixture in a bowl and add the finely chopped peanuts and dark chocolate. Mix well by hand.
    5. With the help of an ice cream scoop place mounds on a parchment-lined pan or tray and flatten it a little to give it the shape of a cookie.
    6. Use the back of a fork to create a cross hatch across the top of the cookies.
    7. Serve as is or let them rest for 30 minutes at room temperature
