    1. In a glass, dissolve the cornstarch in the oat milk.
    2. In a saucepan, combine the evaporated milk with a few strands of saffron, the ground cardamom, and the cinnamon stick. Cook over low heat until it begins to boil.
    3. Add the condensed milk, heavy cream, and the dissolved cornstarch. Stir with a wooden spoon for about 3 minutes, or until the mixture thickens. Remove from heat.
    4. Add the chopped pistachios and dried apricots to the mixture.
    5. Pour the mixture into popsicle molds and freeze overnight. Once frozen, decorate with chopped pistachios before serving.

Tips

Before serving, run the molds under warm water for a few seconds to release the popsicles easily without damaging them.
