In a small skillet over medium heat, toast the hazelnuts, pistachios, pine nuts, peanuts, and Brazil nuts for 2–3 minutes, stirring frequently, until fragrant and lightly golden. Add the sesame and fennel seeds and toast for 1 more minute, stirring constantly to prevent burning.
Transfer the toasted nuts and seeds to a food processor. Add the ground coriander, ground cumin, and sea salt. Pulse until you get a coarse mixture, leaving some larger bits for texture. Taste and adjust seasoning if needed by adding more salt, cumin, or coriander.
Transfer the dukkah to an airtight container. Store at room temperature for up to two weeks.
