    1. Place all the crust ingredients, except the olive oil, into a food processor and pulse until you obtain a coarse crumb texture. Once you have a coarse mixture, combine it with the olive oil.

For the cod:

    1. Mix the mayonnaise and Dijon mustard.
    2. Place the clean, dry cod fillets on a baking tray or baking dish and brush the surface with the mayonnaise–mustard mixture.
    3. Cover with the nut crust mixture and bake at 190ºC (375ºF) for 20 minutes. If the crust is not golden enough, switch the oven to broil mode and cook for an additional 5 minutes.

Tips

Pat the cod very dry before adding the mayonnaise; this helps the crust stick better and turn out crispier.
