  1. 1. Soak the dates in boiling water for 30 minutes. Once ready, strain and drain excess water.
    2. Thinly chop the pecans for rolling. Set aside.
    3. Coarsely chop the other 40 grams of pecans and the almonds.
    4. In a blender grind thoroughly the dates, cocoa, almonds and 40 grams of pecans. You should end up with a thick paste that you can handle with your hands.
    5. Moisten your hands, take 2 tablespoons of the paste and form one ball.
    6. Repeat until we have about 4-5 balls.
    7. Once ready, roll the balls in the thinly chopped pecans.
    8. Store and cool the balls in the refrigerator at least 2 hours before eating.
