- 1 whole meal tortilla wrap, warmed
- 3 cherry tomatoes, halved
- ½ avocado, sliced
- 30 g lettuce
- 1 egg
- 3 prunes, chopped
- Pine nuts (a handful)
- 1 tsp. olive oil
Beat the egg and add the pine nuts and prunes to the mix.
Pour the beaten egg into the pan and scramble with the pine nuts and prunes.
Layer everything in the center of your wrap (lettuce, sliced avocado and cherry tomato halves), drizzle over a tsp. of olive oil and a pinch of salt and, finally, wrap up.
