Halloween is coming and we're already thinking about the menu for our pumpkin party with this Vegan Pumpkin Cashew puree
1) To steam the pumpkin, peel and seed it, then cut into evenly sized cubes. Put the pumpkin in a pot of simmering water and cook for 20 mins.
2) Place the puree of pumpkin, cashews, and cocoa 100% into a high-speed blender or a food processor. Blend till smooth
3) Transfer the pudding to the fridge until you’re ready to eat.
4) Serve with your favorite toppings and enjoy this sugar-free and gluten-free pumpkin and chocolate puree!
