Ingredients

Marinade:
  • 1 kg boneless turkey (diced)
  • 2 cloves of garlic
  • 1 tablespoon of honey
  • 1 tablespoon of coriander (chopped)
  • the juice of ½ a lemon
For the sauce:
  • 1 onion
  • 200 ml coconut milk
  • 1 teaspoon of ginger (grated)
  • 1 tablespoon of honey
  • 200 g peanuts
  • 1 chili
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt

Preparation

1) Marinate the diced turkey for 3 hours in the other ingredients.   2) For the sauce: Chop the peanuts in a blender or food processor. Gently fry the onions and add all the ingredients. Allow it to simmer for 10-15 minutes or until it has reduced and thickened.   3) Take the turkey and drain off as much of the marinade as you can. Grill or griddle and skewer them. Serve with the sauce.
