Prepare the salad by combining the shredded lettuce and grated carrot.
Julienne an onion.
Add some oil to a frying pan and fry the julienned onion.
Once soft, add the vinegar and allow it to reduce.
Remove the bones and scales from the sardines.
Allow to cool before adding more oil.
Add the chopped dates and chopped walnuts to the salad.
Dress with the onion and sardine mixture.
