Ingredients
- 8 corn tortillas
- 300 g tender beef (finely chopped or minced)
- 300 g fried beans
- 1 onion
- some coriander leaves
- 2 chili peppers
- 50 g peanuts (chopped)
- 100 g dried apricots (chopped)
- 2 avocados (sliced)
- 2 tablespoons of oil
- salt
Preparation
1) Cut the onion into long thin strips and fry in oil.
2) Add the meat.
3) Once cooked, add the coriander, the chilies and the fried beans.
4) Add the peanuts and apricots and sauté for 5 minutes.
5) Remove from the heat and mix in the avocado.
6) Serve with the tortillas.
