- 4 egg whites
- 200 g sugar
- Zest of one lemon
- 100 g macadamias
- 100 g cashews
Roughly chop or crush the cashews.
Whip the egg whites to soft peaks.
Fold in the sugar and continue beating until they are the color of snow.
Fold in the dried fruits.
Transfer the mix to cupcake cases and bake at 120ºC for 1 hour.
