Preparation
1) Fry the onion and leeks in oil.
2) Drain them well and combine them with the eggs, cream, milk, salt, pepper and nutmeg with a hand blender.
3) Pour into individual flan moulds.
4) Cook in a bain-marie in the oven at 160ºC for 30 minutes.
5) Very finely shred the lettuce.
6) Mix it with the roughly chopped cashews and pistachios.
7) Dress with a vinaigrette of lemon, oil and salt.
