Ingredients

  • 1 small onion
  • 4 leeks
  • 200 ml semi-skimmed milk
  • 100 ml cream
  • 4 eggs
  • pinch of salt
  • pinch of pepper
  • pinch of nutmeg
  • For the salad: 50 g cashews, 50 g pistachios, various lettuces, the juice of half a lemon and 4 tbsp oil.

Preparation

1) Fry the onion and leeks in oil. 2) Drain them well and combine them with the eggs, cream, milk, salt, pepper and nutmeg with a hand blender. 3) Pour into individual flan moulds. 4) Cook in a bain-marie in the oven at 160ºC for 30 minutes. 5) Very finely shred the lettuce. 6) Mix it with the roughly chopped cashews and pistachios. 7) Dress with a vinaigrette of lemon, oil and salt.
