Ingredients

Ingredients (1 serving):
  • ½ cucumber, chopped
  • ¼ red onion, thinly sliced
  • 5 cherry tomatoes
  • 6 kalamata olives
  • 30 g feta cheese, cubed
  • 1tbsp. mixed seeds (pumpkin, flax, sesame, sunflower seeds…)
  • 60 g whole wheat fusilli pasta
  • Salt
Macadamia Pesto Sauce:
  • 30 g macadamias
  • Fresh basil
  • Grated Parmesan cheese
  • 1-2 tbsp. olive oil
  • ½ clove garlic
  • Salt
  • Black pepper

Preparation

1) Boil 60 g of pasta for 10 minutes then drain.
2) Cut the cherry tomatoes in half, chop the cucumber and slice the red onion.
3) To serve, place the boiled pasta in the middle of a medium-sized bowl. Arrange the vegetables in rows on top of the pasta on one side with the feta cheese and kalamata olives on the other and the macadamia pesto sauce in the middle.

For the macadamia pesto sauce (5 minutes):
1) Wash the basil and chop the macadamias.
2) Then, add the macadamias, fresh basil, grated Parmesan, olive oil and a pinch of salt and black pepper to the food processor and blitz.
